The Chocolate Flan

The chocolate “Flan”, sublimated by its intense black appearance, is made from 65% Peru chocolate and reveals a round, enveloping cocoa note that unites all textures. Pastry Chef Maxence Barbot's signature puff pastry is complemented by a chocolate crunch enclosing a gourmet pastry cream.
